Hit alt-F2, type 'winecfg' and hit enter. Then click the graphics tab, and put a check mark by 'emulate a virtual desktop'. Then click OK. This will make all wine applications run within a virtual desktop in a window, including full-screen applications.
Can you then reproduce the problem with this setting turned on? I know of a crash that can trigger when wine applications change the screen resolution. If you're encountering that bug, this setting will bypass the problem.
