Thanks for the bug report. The reason you have no resolution options is because the system has booted in recovery/safe mode which disables the graphics driver. You can tell this by the "recovery nomodeset" kernel parameters. Sometimes Ubuntu gets stuck in recovery mode if it was used during install.
Please reboot and tap Esc to access the grub menu while you still see the BIOS screen.
