I had a similar issue and removing Chromium's config directory solved it for me. Try to temporarily (re)move it:
mv ~/.config/chromium ~/.config/chromium.bak Now, try to start Chromium and see if you can set it as default. If it works for you, then remove chromium.bak from ~/.config.
