Ok, running uDig in a window on my Linux machine has seemed to resolve the issue. Reason it was working on my Windows machine is that it only has a 15" monitor hooked up to it rather than the 24" my development machine has.

Perhaps on windows the combination of your resolution and pixel width of your map is less than ~1275 and on linux it is greater? If you make the uDig window much smaller on Linux is the request successful?
