Currently plugins have to be removed from the plugins directory.  c:\Program Files\uDig\eclipse\plugins.  Most plugins are a single jar file or occasionally a directory.

Shipped with uDig:
Browser - Embedded browser that allows webpages to be opened within uDig.  Any link that is a link to recognizable GIS data will automatically be added to the map.
Catalog and Catalog.UI  - The Catalog framework
Catalog plugins - There are many different catalog plugins.  Pretty well a single plugins for each format or service.  For example shapefile and WFS two seperate plugins.
Context - Plugin that allows OWS Context documents to be imported and exported.
Feature Editor - the default feature attribute editor implementation.  It is an example of how to extend the Feature Editor extension point.
Help - All the help documentation
Issues - A framework for adding/viewing/fixing Tasks or issues.  The issues can be stored in Memory or in a database.  Currently PostGis database and in-memory implementations are available.
Legend - The legend MapGraphic
Language Fragments - there are a number of jars ending in .nl these are the translations for the associated plugins.  If only english is desired then the NL plugins can be removed.
Location - The GeoCoder plugin.  Allows search by address and shows the location on the map.
MapGraphic - The framework for MapGraphics.
Printing.Model, Printing.Edit, Printing.UI - the printing framework
Project  - The Map/Project model and the rendering framework
Project.UI - The UI display components for uDig including:
MapEditor, LayersView, ProjectExplorer
Also includes the tool framework but no tool implementations
BasicFeatureRenderer - Renderer plugin for rendering all feature layers exception shapefiles
ShapefileRenderer - Renderer plugin for rendering shapefiles
GridCoverageRenderer - Self explanatory
BasicWMSRenderer - Also pretty self-explanatory
Style Plugins - The plugins for the styling UI components as well as the framework for defining custom styles.
Default Tools - Zoom, Pan, Select, Show All, Stop Rendering, Commit, Refresh, Rollback, Cursor Position tools
Edit Tools - All the editing tools and the editing framework
Info Tool - The Information Tool
Select Tool - the selection tool and the Table view
UI Plugin  - The core UI plugin that contains the application and all common utility classes.  Also contains the Drag And Drop, Operations and Transfers extension points and frameworks.
Validation Plugin - Plugin for running validation operations on vector layers
Bookmarks Plugin - Allows an area to be bookmarked for later viewing.  Bookmarks are saved with a map.


3. are there any in development for the near future


Future plugins:

Not too much in the near future.  We focussing on the bug fixes right now.  There is some community stuff out there though for example:

Transformation Tool - A tool for transforming a layer using Affine Transforms, Rubber Transforms and I don't remember the other type.  The tool allows vectors to be drawn and creates a Transformation based on those vectors.  Then applies the transformation to all the features in the layer.

GPS Catalog Plugin - I don't remember the format but this allows certain GPS formats to be read.
