Hi,
You can edit .shp files with uDig. Make sure the files are editable
and follow the instructions in the Help. There is also a couple of
tutorials on how to use uDig published at:

http://udig.refractions.net/confluence/display/UDIG/Walkthrough+2
The first walkthough is just how to use uDig in general. The second
teaches how to edit with the application.
