Does the GML file have an XMLschema associated with it? If not then uDig can't read the file. Right now uDig is very strict about the GML data it accepts.

Did you load the gml file into uDig as a gml file, or as a wfs via
GeoServer. If the former then I think this is one might be for the udig
guys yes.
