this solved also for the problem in the table view I had yesterday.

Its under Window/Preferences/General/uDig UI. Usually I have to switch UTF-8 to windows-1250 - the restarting and deleting file from catalog is also needed. Maybe uDig should handle this in more user friendly way.

I can not find a list of available encoding... should I put the name by hand?
Really don't know where to find the encoding of my shapefile...

That is a good question.  I can think of a few things.
1.  The charset is incorrect. It is possible that it is interpretting  the file 
wrong.  I think this is unlikely.
2.  The field definitions in the DBbase file is wrong.  Try opening  the dbf 
with open office and save it out again.    Maybe that will fix  it.
