Cory (and old udig hacker) was the last person to get excited about this :-)
As far as I can tell open street maps has a nice API and it should be a couple days work to pull data in... making a nice renderer (or converting to geotools features may be a bit more fun).

I remember back in the summer someone mentioned that they had created a uDig plugin that would pull data from google maps. However it's not really legal to redistribute it. So I was looking at http://www.openstreetmap.org/ and they are actually very similar to google maps but with out licensing restrictions. So it may be possible to adapt that plugin to work with openstreetmap. Which I think would be a big turn on for people to use udig.
