hey, I don't know at all what code is being used to generate that image since I no longer understand what's happened in GeoTools nor what uDig has chosen to integrate from GeoTools. There is a slight chance that the code on which you depend relates to the code we used for a project here. In our case know of a similar bug, with a workaround that we have to start with an image that has an alpha channel (RGBA).
