Ciao Jody, I have set up udig trunk on my linux workstation and quickly tested a few of the "offending" raster files. Before starting I tried a few of them in geosever with no problem. When I tested them with udig I noticed that the uDig basic-gridrenderer when we try to rendere raster data with a CRS different from WGS84 passes to the underlying geotools grid coverage renderer an incorrect envelope therefore nothing gets rendered.
If someone is interested I can try to spare half a day to look into this together and fix things for good. i would also like to start the work to bring gdal plugin to supported land.
