Okay for those of you who are interested I think I've solved my problem
in a really complicated way :)
I ended up going into the geotools epsg-hsql project and finding
Martin's instructions for creating the EPSG.sql file. I downloaded the
latest epsg codes from the epsg authority and followed Martins
instructions and make myself a new EPSG.sql file. The newer epsg
database had the 3785 projection in it.
I however did have to make one change to 3785 projection in the EPSG.sql
file to get this to work - I had to change
'Mercator (1SP) (Spherical)' to 'Mercator (1SP)' as GeoTools referencing
doesn't seem to support 'Mercator (1SP) (Spherical)' in the
EPSG_COORDOPERATIONMETHOD table. I'm not entirely sure what effects
this will have (if any); although it seems to work okay for my needs.
If anybody is interested in this new EPSG.sql file I can provide it.

Since I needed to do that for udig 1.1, I have solved it the way you
need it also.
Inside the epsg jar you will find an epsg.properties file. Inside
there the list of crs is kept, one per line:
epsgnumber=WKTdefinition
Make sure you have a unique number and add your definition.
What I do is substitute the original jar in the udig libs at the first
time JGrass is run. You might make a custom package so you probably
don't need that.
