hmmm, not sure here, but I think not yet. As far as I know the geosolutions guys are bringing that support in the latest geotools version (please correct me if I am wrong), so it won't be available until that propagates to uDig at some point. I am also not sure if once the support is there, the libs do everything in background to support bigtiffs or we have to tweak the service.
