Nevertheless, Could you please describe what kind of customization is
in your mind? It would help to answer if we know a use case we can
talk about.

Have a look at the following plugins:
* net.refractions.udig.style
* net.refractions.udig.style.sld
* eu.udig.style.advanced
* eu.udig.style.jgrass

If you like to extend the Style Editor pages please have a look at the
extension Point
StyleEditorPage.exsd (definition is in the net.refractions.udig.style.sld plugin
