Marco, have a look at the doc folder, here you can find user and dev directories as documentation areas for development and user guide. I suggest to add the workflow to the Merge Tool Page at https://github.com/uDig/udig-platform/blob/master/docs/user/en/Merge%20Tool.rst (the site will end up down below this site : http://udig.github.com/docs/user/Using%20Feature%20Edit%20Tools.html)
