In informal conversation with Mike Milinkovich these questions are pretty much 
resolved:

Understood, it is straight forward to adapt (as each license has an example).

Okay so that is two answers (indeed you answered this when you confirmed that 
LocationTech was not a legal entity)...

A1: Right now I will engage the language around redistributing eclipse.org 
content, since Refractions is doing the distribution
A2: When uDig is part of LocationTech, I will change it back, since the content 
will be distributed by the legal entity "Eclipse Foundation"
