It may be bad form, but I've found an answer to my own questions:

1) zpool downgrade doesn't seem to exist. Be very careful about running
"zpool upgrade" - make sure your other BEs can cooperate with the version of
ZFS.
2) You can upgrade to a non-current version of nevada in indiana via:

# beadm create test
# beadm mount test /mnt
# *pkg -R /mnt install pkg:/entire at 2.5.11-0.117*
# bootadm update-archive -R /mnt
# umount /mnt
# beadm activate test
# init 6

bootadm update-archive

rather than doing the regular:
# pkg image-update
# init 6
