I run MS Software Update Services on the same server I have Unattended on and just include a customized Windows Update reg file with my Unattended build. Then I let the IE updates sort themselves out within the first 24 hours after a build.
I figured it wasn't worth messing with slipstreaming IE updates considering the rate they publish new ones or modify existing ones.
