Emacs supports the "text-mode" with many customizable "text-mode-hook" types that allows entering text in various languages according to its tradition. The two spaces tradition is specific to English. A correct hook for the French locale would remove this extra space needed to identify the "sentence-end" (the regular expression it uses is customizable)...
