On OpenBSD at least, it's easy to set up. Have a look at http://www.drones.com/obsd-fw.html, something I wrote to setup OpenBSD as a firewall/NAT box, with all the daemons a normal person would need. I've set up OpnBSD firewalls for quite a few friends now.
