In some applications it is possible to take advantage of dual displays, such as when you are using Powerpoint with a projector.

I do not believe you can accomplish what you are trying to do with just Excel; however, you should be able to embed the data you have in an Excel file into Powerpoint and use the dual display option in Powerpoint slide show mode to show only those cells/rows in Excel that you wish to display via the Powerpoint slide.

Say I am displaying a screen with an Excel spreadsheet, and I only want to
display part of it. Eg., the output data and not the changes the "operator" is
making to get the values. Are projectors able to be set to display only
selected  parts of the screen -- analogous to the "print selection" mode on
printouts --  as opposed to projecting the whole thing?

I guess I could achieve what I want by zooming and only projecting the
desired part of the image onto the screen and letting the rest fade off into the
surroundings. But this is so inelegant.
