I agree that the Ubuntu route will probably be the easiest since there
are apt repositories for the things that you'll need. I'm running
FreeBSD on mine (FreeNAS with Michael Herger's SlimNAS extension) and
the overhead is very low. It doesn't run any GUI and runs pretty
decently on a Celeron 600 with 256mb ram.

With Ubuntu you can also install Webmin (if it's not already installed)
to maintain the system without having to do a whole lot of command line
stuff.
