Ah, in that case you will need to setup a Samba share on the Ubuntu box
where you will put all of the iTunes files.  Once that is setup and
working you have a couple of options.  You can:

A) Store your music on the Ubuntu box and not use iTunes integration in
SlimServer.

B) Store all of the iTunes files (xml + itl files) and music on the
Ubuntu box and force iTunes to work from there.  Doing this would allow
iTunes integration with SlimServer.

In scenario A only your music resides on the Ubuntu box and the xml and
itl files that iTunes uses stays on the XP box.  You would setup
SlimServer to treat it like a non-iTunes library.  To do this go to
iTunes Preferences and then advanced and specify the music location.

Scenario B stores none of the iTunes data on the XP box.  I found a
