I use also Ubuntu 7.10 with Squeezecenter from the unstable repository (deb http://debian.slimdevices.com unstable main ) and everything works fine atm, but I also did have problems after some updates and manual fiddling from my side. My error was to manually erase/move some files installed via adept, something I shouldn't have done, but I could solve this by purging (caution! deletes slimserver configuration files) the Squeezecenter package and then doing a clean reinstall.
