Booting from USB stick is an imprecise science. Make sure that your motherboard supports booting from USB. Try installing FreeNAS (www.freenas.org), for example, just to make sure that your MB supports treating your stick as a bootable HD during installation. Try a different stick also, and make sure in the BIOS there's no option to enable USB booting.
