I am having a similar problem! I have squeezebox "Version: 7.4.2 - r29803 @ Thu Jan 14 08:12:42 PST 2010" installed on a computer running debian. Artist/Album/Track names displayed on the squeezebox device and inside the web interface with utf characters are butchered.
André Estermann appears "André Estermann", for example. The file system is utf8, the tags are utf8. What am I doing wrong here? I have added the char=utf8 option to /etc/defaults/squeezecenter and restarted the server, but that hasn't made a difference.
