I've been running various versions of Debian without the GUI as my Squeezebox Server for the last few years now, and it's perfect for what I want it to do, which is just to serve up music reliably and run my library management tasks via cron jobs.
I always prefer not to install the GUI unless I have a specific requirement for it, and on a server it's pretty hard to justify! -- paulster Web Interface sending music to the wrong player?
