I produce the Gentoo ebuild so I suppose that puts me in the frame...!
I've not used Sabayon so I can't comment on it directly, but are you using the SBS ebuild for 7.5.4 'untouched' from it (ie have you modified the init.d or conf.d scripts), and could you also point me at where I might browse the content of that package so I can see if anything in there has changed from my release without having to install Sabayon?
Secondly, you could start by setting SBS_OPTS to "--d_startup" in the /etc/conf.d/squeezeboxserver file (assuming Sabayon hasn't modified beyond recognition) and restarting the server - you should get lots of progress information printed while the service is trying to start.
The init.d script for the ebuild should not be running SBS as root since it launches it with "start-stop-daemon --chuid squeezeboxserver....". You should always start the service through this init.d script rather than running 'squeezeboxserver' directly as root. Note, though, that this is from my original Gentoo ebuild and again I don't yet know whether it's been modified in Sabayon or your installation.
