Well, that was fun.

The answer?

MANY MANY ".dpkg-new" and ".dpkg-tmp" files scattered throughout the
/usr/share/perl5/Slim/ tree. Once I'd trawled through these and renamed
the most recent one to the correct name, LMS is starting up just fine
and running perfectly, with all plugins in place.

Long and short answer: broken DPKG update.
