Correct, you can't print via serial, and there are not any OS X 
drivers from Epson for the 700.

I use an Inland USB-parallel adapter ($20) to attach my Epson 600 to 
a CompUSA USB/FW card ($20) in my Beige G3. I use the Epson drivers 
from Gimp-Print (priceless) and it all works quite well.
