- In the online demo, while editing a page, there didn’t seem to be a style selection dropdown for the editable regions. How do you easily change the style while modifying text in an editable area in Magnolia through the browser?

The editor used is FCK. You will need to define the available styles in the FCK config file.
Info about the editor: http://www.fckeditor.net/

- Does Magnolia have CAPTCHA for forms?

See http://wiki.magnolia-cms.com/display/WIKI/Captcha

- Does it have built-in blog/wiki? If not, is it difficult to add this functionality?

Not yet. Some are working on this however. We're currently working on blog module too...

- How easy is it to integrate custom Java web apps into Magnolia? The main concern is the session management. Can session info be shared between a custom app and Magnolia?

Is you're custom app using a standard javax.servlet.http.HttpSession? Then yes, the same is used by Magnolia.
