Hi,

We had the same requirement and I can confirm it was possible to extend 
UUIDLink to make the input-field not editable.

This was important for us, as otherwise our editors would create tons of broken 
links by pasting URLs or other random garbage into the field.

One concern is that it is no longer completely intuitive how to remove the 
link: it is possible  (simply open the picker and select nothing) but not 
intuitive for the editors.

I'm afraid that uuidLink doesn't support this kind of functionality, however 
you should be able to extend this control and have it produce html that would 
not allow user to enter path directly. But consider that it might be more 
efficient for experienced editor to type the path rather then browse through 
the tree.
