I had a similar issue like two weeks ago, try setting the contentType property
directly in the JCR so in the end you have something like this in the form
component
page v
formArea v
0 v
fieldsets >
contactMailFrom -> ${email}
contactMailSubject -> ${subject}
contactMailTo -> [email protected]
contentType -> text
...
