Like I mentioned in the other thread this does work. I think there just may be 
some confusion. One "gotcha" about the process that you need to keep in mind is 
that setting the output format won't have any effect on the name of the node. 
So for example if you have a look at this node:
https://demo.magnolia-cms.com/.magnolia/admincentral#app:assets:browser;/travel-demo/social-icons/google-plus.png:treeview:

You can see the name of the node includes the extension ".png". When this node 
goes through image processing the name of the node will still end with dot png 
even if the node gets converted to jpg. You need to look at the property 
jcr:mimeType to really be sure what it's type is.

So is it possible that this is what is happening here?

In Magnolia 5.4.5 we added the feature to being able to browse any workspace 
using a drop down selector. You can browse the imaging workspace to see the 
generated images. Here you can export the node and see the result of the 
processing.
