The message body is generated from a template (typically using
Freemarker). The templates themselves are configured in magnolia's
config. The samples module should hold an example.

In your template with the simple mail tag, you should be able to do
something like:
<cms:setNode var="currentPara" />
<cmsu:simpleMail to="${param.toAddrFrmField}"
from="${param.fromAddrFrmField} subject="${param.formFieldSubject}"
template="${currentPara.someTemplate}"/>
param is a jsp implicit object containing a map to all the form field
values. The above is a really simple example. In truth you'd want to
do some field validation before attempting this so your web page doesn't
become a spam gateway.
