Well, I keep publishing pages to clear out whatever has been cached
previously!
And the instance is on the server already, so I'm not running it out
of Eclipse. Or did you mean something else by "pluggin in the
debugger" like setting the logging to debug for the cache classes?
More stuff I tried:
- changing the "store" executor class to the Bypass class
-> nothing
Can I simply trash the cache module and run Mag without it until I got
things figured out here?

Plugging your debugger in the CacheFilter should help figuring out
what's going on.
