To answer my own question, here's what I did:

Copied the pelt skin to my own skins area and renamed it.
Changed forrest.properties to use the new skin
Opened skin-to-xhtml.xsl and searched for the Google magic string
Replaced it with my own parameters
Rebuilt the site.
