Good morning, Ah okay - I do not have the guacamole-auth-json extension in use. And I've reverted that and still am unable to disable copy and paste capabilities. Any other ideas?

If you've modified "rdp.json" and changed the value shown from "true" to "false", what you've actually done is tell Guacamole that the value it should set for the parameter when that checkbox is checked is "false", which will render that field useless.
