1 & 2. Starting with 2.0 all data is stored in off-heap memory, regardless of persistence configuration. Memory mode configuration is removed. 3. Yes. Data is always stored in pages which can transparently reside both in memory and on disk. If persistence is not enabled, you have only in-memory pages, but the data format is the same.
