it's great to know that you are trying to setup/test GL in OFbiz and I think that it would of great help, both to users and developers, if you could put your notes in an OFBiz Wiki page (http://docs.ofbiz.org/pages/listpages-dirview.action?key=OFBIZ)

You have to associate the GL Accounts that your company will use; you
can use this screen to accomplish this task: General Ledger>Setup>Chart
Of Accounts

3) Where is a good resource to find out about how various provided
values are being used?  What they mean?  etc etc
