Thanks for the help and advice everyone. For a quick and easy solution we are
going to to integrate into an existing middle-ware solution, Clippership, to
get our labels printed and use custom code to complete the shipping process. 
I will look at the weighing/scale solution you've suggested or will possibly
require users to enter in the weights manually.
