All you need on top of a standard operating system install is Java JDK and a supported database system such as Postgresql or Mysql. XAMPP will install a lot more than you need. That is, you don't need the A(pache) or either of the Ps (Perl, PHP).
Have a look at https://cwiki.apache.org/OFBTECH/apache-ofbiz-technical-production-setup-guide.html, though for use in an internal LAN you can probably ignore a lot of those settings. BTW XAMPP *is* a web-based server. That's its main purpose. But like all web-based servers, it will work happily in a private LAN. Cheers, Anne.
