Thanks for the link & the offer, Leon. I was actually able to fix our issues once I realized that the root of problem was an apparently-well-know flaw in IE.
In case anyone is interested, the flaw is that IE auto-adjusts box elements if contents of the box are wider than it's defined size (Firefox and most other browsers don't do this). We were unknowingly taking advantage of this behavior in our menus. So the fix for us was basically to be a bit more explicit in how the menu elements were defined.
