Really, is that true?  I thought there was a way to override the
interceptor just for this action/result

Shouldn't that be:

  <interceptor-ref name="params">
    <param name="excludeParams">dojo\..*,^struts\..*,d-\d*-s</param>
  </interceptor-ref>

And remember, the way you have it configured, none of the other
interceptors are going to run, only your special params interceptor.
