Just realised it isn't covered in the Getting Started Guide on the 
website, so will update it.

Yeah, according to that very wiki page: "...Releases of Tika version 1.2 
and beyond will ship with tika-server enabled..."

So my question was, "OK, if that's true, where is it?  I must be missing 
something."

(I'm building it now...boatload of dependencies in there...would be nice 
to have a concise list if/when you update the page.)
