You are not missing anything. You'll have to change the email address in the database directly. Deleting accounts is not recommended due to log history unless the account was never used to make reservations. If that's the case, you can manually delete it from the localauth table and the user table. You can disable a local account by setting the localauth.passhash field to garbage in the database.
