To get around Dusty's problem (with deletion of data), I'm using HSQLDB - A new database is created with the test data each time, so there's nothing to delete. I just start Jetty with the hsqldb profile and it all works nicely. Having a brand new DB each time you run jetty may not be ideal later in a project when you start caring about the data in your DB, but in the early stages while you're still playing with the data structures, I find it a great way to go.
