Unfortunately, my only response is it appears that AppFuse/Hibernate doesn't work well with Oracle XE. I wish I had a better answer for you, but I don't. I'd suggest using MySQL and logging an issue against 2.1.0-M1 and we'll try to fix it before the final release.
