Camel uses the concept of "Pluggable Class Resolvers" (http://camel.apache.org/pluggable-class-resolvers.html) to scan packages for type converters. There are several class resolvers available for containers such as Websphere, JBoss, etc. There are also a few OSGi aware class resolvers (these are included in camel-osgi, do you have that library deployed in Glassfish?.
The OSGi aware class resolvers in Camel should be enough for a successful deployment on Glassfish. However, I've no experience running Camel inside Glassfish myself. Can you provide more details?
