Since each route has its own moveFailed and move settings, I followed your
advice in this way:

Original route:

        <from
uri="file://c:/folder/inbound?move=.done/${header.breadcrumbId}_${file:onlyname}&amp;moveFailed=.error/${header.breadcrumbId}_${file:onlyname}&amp;readLock=changed&amp;readLockCheckInterval=5000&amp;readLockTimeout=0"/>
        ...
</route>

Modified route:

<route id="inbound-standard">
        <from
uri="file://c:/folder/inbound?move=${header.moveExpr}&amp;moveFailed=${header.moveFailedExpr}&amp;readLock=changed&amp;readLockCheckInterval=5000&amp;readLockTimeout=0"/>
        <setHeader
headerName="moveExpr"><simple>.done/${header.breadcrumbId}_${file:onlyname}</simple></setHeader>
        <setHeader
headerName="moveFailedExpr"><simple>.error/${header.breadcrumbId}_${file:onlyname}</simple></setHeader>
        ...
</route>

In this way I can manage these expressions on a per route basis.
